I have been planting one bag oats, one winter wheat and one cereal rye with some clover and rape mixed in. Now, as I have expanded the number of plots, (have to double the amount of seed), do you recommend staying with the same %, or use more wheat or oats?

I would eliminate the clover Unless I was going to dedicate an area for it and maintain it annually. It's expensive, and of very little value in the fall and winter... Until it takes off in the early spring.

Other than that, if you're happy with your rato on 1ac, no reason not to simply double it for 2ac, etc...

Depends on the type of clover you are planting and your goals. If you want to feed deer and turkeys the following spring, then red, arrowleaf and balansa clovers are great. If you want a pure stand of clover, go with durana or pinnacle.
