We’ve had Eggs Sardou over in New Orleans many times and absolutely love it.

I’ve tried this variation with a number of different fish and tried it tonight with some redfish we caught this afternoon. Now I love fried redfish, blackened redfish and redfish cooked just about any way but this turned out really, really good.

Cook some fresh spinach in butter. Flour the redfish filets and pan fry in butter/olive oil. Poach some eggs. Make some homemade hollandaise sauce.

Put the spinach on the plate 1st then top with the fish. Place the poached egg on top and then pour the warm hollandaise sauce over all.

I’m sure someone other than me can take credit for this and I apologize if I’ve posted someone else’s recipe. But, if you want to try something really good, try some fish like this. I’ve done it with catfish and cod and redfish was every bit as good. I imagine some speckled trout would be good too and am going to try it next time we get some.

Hollandaise sauce: melt 3/4 stick of butter in the microwave. Wisk 3 egg yolks over a double boiler pot until they get a little thick. Slowly pour the melted butter into the warm egg yolks stirring/whisking constantly. Squeeze about 1/2 a lemon in. If it gets too thick put one or two ice cubes in until they melt, stirring constantly. Sauce will be WARM not hot.
